Description:

This is a family recipe that has been passed down through three generations in my family. It is very moist and not too sweet. Great for any occasion.

Ingredients

c shredded zucchini

c flour

1/2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt
1
tsp baking soda
1/8
tsp clove
1
1/2 c vegetable oil
2
1/3 c packed brown sugar
4
eggs
2
squares unsweetened melted chocolate
1
c semi-sweet chocolate chips
1
c chopped pecans
GLAZE
1
c confectioners sugar
1
tbsp butter
dash of salt
2
tbsp corn syrup
2
tbsp water
1/2
tsp vanilla

Directions

1.
Preheat oven to 350 degrees.
2.
Grease pan.

Combine flour, baking powder, baking soda, cinnamon, salt, clove and set aside.
4.
Beat sugar and oil on medium and add one egg at a time--beating well each time.
5.
Beat in chocolate gradually.
6.
Add dry ingredients.
7.
Beat until smooth.
8.
Fold in zucchini and chocolate chips and pecans.
9.
Pour into greased pan and bake approximately 1 hour 20 minutes.
10.
Cool 20 minutes and remove from pan.
11.
Spread with glaze when cooled completely.

GLAZE

Beat sugar, butter, and salt.
14.
Add corn syrup, water, and vanilla.
15.
Stir until smooth.
