Easy Apple Sauce

Description:

This is a fairly easy recipe for a smooth homemade applesauce that you can enjoy on it's own or as a side to Hanukkah latkes.

Makes 3 cups

Ingredients

McIntosh apples washed and peeled
1/2
cup sugar
1
lemon, juiced
1
cinnamon stick

Directions

1.
Core the apples and cut them into medium chunks.
2.
Mix the apples, lemon juice and sugar in a heavy sauce pan with a tight fitting lid. Place the cinnamon stick atop the mixture, close the lid and let it rest for about 20 minutes.
3.
The rest will draw a fair amount of moisture from the apples. Heat the mixture until it starts to boil then lower to simmer, covered, for about 30 minutes. Stir as needed.
4.
By now the apples should be completely softened. Let the mixture cool to room temperature. Discard the cinnamon stick.
5.
For a smooth applesauce, run the mixture through a food mill, strainer, or food processor.
6.
You may need to add more sugar to taste.
7.
Refrigerate and serve cold.
