1) salt/pepper chicken to taste

2) using a big pot, fill it about halfway with water

3) put chicken into pot with water.

4) bring to boil. then leave it not simmering, but not boiling either... that happy place in between the two. leave for about an hour. (keep checking on water level, which should remain at half full.)

5) when the chicken has about 5 minutes to go before being done, chop up about 1 cup of cilantro. also, open and drain your can of mushrooms (or chop up mushrooms)

6) turn off chicken, pour in cilantro and mushrooms, let sit for 5 minutes covered, though eye should be off.
