Super easy over night daikon radish pickles that aid digestion.

Prep:

Only a few minutes to prepare but must marinate over night.

Ingredients

1.5
cups of chopped daikon radish
.75
tsp salt
1
Tbsp rice vinegar
.25
tsp black pepper

Directions

1.
Scrub and chop daikon. Toss daikon with salt. Cover and refrigerate for up to one hour until about 2 Tbsp of water is released. Drain and thoroughly rinse daikon. Drain well again. Add rice vinegar and pepper. Cover and refrigerate overnight or longer.
