Easy Eggs in Mashed Potatoes

Description:

Yeah, it sounds weird, but eggs are always great with potatoes. Think sunnyside up with homefries, french fry omelette and yeah, even eggs in mashed

Ingredients

6
eggs
6
medium potatoes
water
1/2
bar of butter
1/2
cup whole milk
1
tbsp chopped parsley
salt and pepper
Pyrex dish

Directions

1.
Boil potatoes in water until they are tender
2.
Let them cool
3.
Peel them
4.
Mash them with the butter
5.
Add salt, pepper and milk and mash little by little
6.
Grab your pyrex and grease it
7.
Fill it about 1/3 of the way up
8.
Make 6 holes with a spoon so that you can place the eggs in there
9.
Crack the eggs and place them in the holes carefully
10.
Sprinkle with parsley
11.
Cover the pyrex and put in the oven at medium heat until the egg whites are cooked
12.
Serve immediately
