Easy Feta and Spinach Omelette

Ingredients

3
organic eggs
1
T milk
1
T butter
1/4
cup chopped fresh spinach (washed)
1/8
cup feta cheese (I like arahova feta)

Directions

1.
Scramble the eggs and milk together (you can use cream too, it will taste better but it will be less healthy) Set aside
2.
Melt the butter in a non-stick frying pan
3.
Add the spinach and sautee until it's wilted - Set aside
4.
Add the eggs - and swirl them around so there is a thin layer of eggs over the whole mixture
5.
When the eggs are almost done, swirl the eggs once more to slightly thicken the upper layer
6.
When the edge starts to separate from the pan, add your spinach and your feta (on one side only)
7.
Play with the thin upper layer so it does not stick. Flip the non-topping side over carefully so the egg does not rip.
8.
Get a plate and slide the omelette onto it.
9.
Garnish with salt and pepper
