Ingredients

cup chopped heritage tomatoes (pick a breed that is mild - not too sweet not too acidic)
1/4
cup chopped yellow onions
1/4
cup chopped fresh cilantro
3
tbsp olive oil (separate 2)
1
tsp Tony Cacheres original Creole seasoning
1/4
cup panko breadcrumbs
1
egg while lightly beaten
Your favorite cheese (I used fresh mozzarella today)
Your favorite bread (I used a baguette)
Directions
1.
Mix all the ingredients together in a bowl by hand (except for 1 tbsp of oil).

Form the mixture into 9 patties.
3.
Put one tbsp oil on a non-stick skillet.
4.
Clean off excess oil with paper towel.
6.
Cook for 4 minutes on high on each side.
7.
Lower the heat and cook for an additional 4 minutes while turning the patties about each minute.
8.
During the last minute add the cheese on top.
9.
Put on your bread and serve with tomato and lettuce.
