Description:

This is an easy way to make latkes without all the hassle when making with shredded potatoes. They make great apps. no matter what Holiday tradition you celebrate.

Bag Frozen Mashed Potatoes - Thawed

TBS Olive Oil
salt, pepper, paprika to taste
1/2
cup creme fraiche
2
tsp. finely chopped chives
zest from 1 lemon - finely chopped
1/2
pound smoked salmon - cut into 1/2"square pieces
1
TBS capers

Directions

1.
Thaw mashed potatoes in bowl, draining any residual water. Add salt, pepper and paprika to taste. Using hands, form several 1 inch balls, pressed flat into panckaes.
2.
In a large skillet, sautee pancakes in oilive oil until gold brown on outside. Set on paper towels when done.
3.
Place 1 piece of smoked salmon on top of each pancake.
4.
Mix creme fraiche with chives and place into pasty bag or plastic zip lock bag with corner snipped. Pipe mixture on the top of salmon. Top with pinch of lemon zest and capers.
