Description:

These will beat out regular french fries any time. Serve with some chimichurri and leave your friends begging for more.

Ingredients

garlic cloves

bay leaves

tbsp salt

quarts water
1
1/2 pounds yuca (washe, peeled, and sliced into fries)
(you can use frozen yuca as well)
vegetable oil for frying

Directions

1.
1. Put the garlic, bay leaves, salt, and water in a saucepan.
2.
2. Bring to a boil.
3.
3. Add Yuca and reduce the heat to medium, and simmer until yuca is tender, but not sticky or falling apart, about 30 minutes (depending on your stove cooking time may be more or less). You will determine cooking time the more you make these.

4. Drain the yuca on paper towels. When they are cool enough, pat the dry.
5.
5. In a deep skillet, heat oil to 375 Fahrenheit.
6.
6. Fry the yuca until golden, drain on paper towels, sprinkle with salt and serve with your favorite dips (I like chimichurri, mayonnaise, aioli)
