Description: Few friends are coming over including the girl(or boy) you like and chips and salsa is not an option.

Ingredients

cups of edamame or your choice of white beans
8
half-inch slices of a French bagette
1
tbsp. lemon juice
2
tbsp. extra virgin oil
2
tbsp. sea salt
4
tbsp. freshly grated Parmesan cheese
2
tsp. ground pepper

Directions

1.
Place edamame in a bowl and add lemon juice. Mash with a potato masher or the back of a fork. Toast the bread. Spread a spoon of mashed edamame on each piece of toast. Drizzle generously with oil and sprinkle with sea salt, cheese and pepper. Enjoy!!
