Ingredients

Makes approximately 9 dozen bite-sized of eyeballs
3
oz (small box) lemon gelatin (can be sugar-free if you want)
1/2
cup miniature marshmallows
1
cup hot water
1
cup pineapple juice
8
oz of cream cheese (can be low fat/Neufchatel)

Directions

1.
1. In a 1 cup of water in a double boiler dissolve lemon gelatin, then add marshmallows stirring till it melts. Remove the mixture from heat.

2. Add the pineapple juice and the cream cheese.
3.
3. Beat the mixture until it is well blended. And let it cool slightly.
4.
4. Use a truffle candy mold or round ice cube trays. Spray them with a non-stick cooking spray and then pour the mixture in the molds and let it set in the fridge.

5. You can also try to the mixture pour into a deep ceramic dish let it set and chill until thickened and firm enough to makes use into eye balls by scooping.

6. Use a melonballer to scoop full balls of the mixture then set aside for decoration later.
7.
7. Use liquid food coloring for decorating and use an old detail paintbrush and to paint and get creative.
8.
8. Black food coloring for the pupils is needed.
9.
9. If in a hurry, you can carefully dip the ball in a small pool of food coloring to approximate the iris, but still paint on the pupils. This method can be used instead of painting the irises.
10.
Note: if you are using the melonballer method, you might need to add one package of plain gelatin to your mixture to make it firmer.
