Ingredients

1
pound black beans
1
pound smoked ham hocks
1
pound chorizo
1/2
pound bacon
1/2
pound smoked pork ribs
3-4
strips of smoked bacon
1/2
pound lean pork
1/2
pound lean beef
(Use pigs feet/ears if you have the guts)
1
large onion
4
garlic cloves
2
tbsp of olive or vegetable oil
1
tbsp vinegar
salt to taste
black pepper

Directions

1.
Soak the beans overnight in water.
2.
The next day, cook the beans for 4-5 hours at low heat.
3.
Place ham hocks, chorizo, ribs and bacon in deep pan with plenty of water and bring to a boil.
4.
Change the water and bring to a new boil, repeat three times.
5.
In a large frying pan, fry the onion and garlic using either vegetable or olive oil for three minutes.
6.
Toss in the pork and beef.
7.
Cook another three minutes.
8.
Mash l0 tablespoons of beans and add to the pot.
9.
Add two tablespoons of olive oil, three garlic cloves all chopped-up or mashed and a tablespoon of white vinegar.
10.
Heat over medium fire for two-three minutes while stirring.
11.
Transfer to contents of frying pan.
12.
Simmer for l5 minutes.
13.
Add contents of frying pan to the beans boil at medium heat for 1-2 hours.
14.
Serve with white rice
