Description:

Pesto Chicken Alfredo is a marriage between two great Italian pasta recipes. The subtle creamy flavor of a rich Alfredo sauce recipe and the brilliant texture, color and freshness of the pesto. I can think of only a few culinary marriages that are better. Using both techniques of homemade pesto and the original Alfredo Sauce recipe created by Alfredo himself and you are about to partake in the creation of a masterpiece.

Ingredients

lb Fettucini

tbsp of butter
2
cups of heavy cream
1
cup freshly grated parmigiano
3-4
tbsp of pesto sauce
1
lb of chicken breast
Salt & Pepper to taste

Directions

1.
You can grill, broil, or boil the chicken breast and you should do this first before you begin. Cut chicken breast into pieces.
2.
Begin boiling the water and add the fettucini immediately. This sauce doesn't take long to make and you need to add the fettucini as soon as it's cooked Al dente.
3.
Melt the butter in a sauce pan but don't let it boil or it will separate. If it does, toss it out and start fresh. This sauce must be creamy.
4.
Slowly add the cream and let is simmer for about 1 minute. It will thicken slightly as it heats but the sauce really get thick once you add the parmigiano.
5.
Now plop in a couple of table spoons of Pesto and stir.
6.
Add the fettucini, the chicken and the parmigiano and toss together.
