Description:

This is a recipe passed on to me by a colleague of my firefighter husband. It's very popular at the fire station and at my house. It always get rave reviews for being super moist thanks to the oats. Use my technique for cooking individual portions in muffin tins to cut baking time in half from that of a traditional large meatloaf. This would also be great with ground turkey or your favorite meat combination.

Ingredients

1
lb. ground chuck
1/2
lb. ground pork
3/4
c. quick-cooking oats (don't use standard oats, they won't cook through and they'll be chewy)

T. Worcestershire sauce
1
egg
3/4
c. bbq sauce (use your favorite brand) & some for pouring on top
1/2
t. salt

Directions

1.
Preheat oven to 375 degrees. Mix all ingredients together with clean hands until combined. Don't overmix or meat will get tough. Mixture will be very moist, almost sloppy. Form into six individual portions and place into muffin tins. Pour some of the bbq sauce on top. Bake for 30 minutes or until cooked through.
2.
To bake in a traditional loaf shape, place in loaf pan or other baking pan, but don't put bbq sauce on top. Cook for one hour, pouring bbq sauce on top half way through cooking.
