meat, chopped - 2 meatballs, or the equivalent amount of leftover meatloaf, baked/grilled chicken, steak, or breakfast sausage/chorizo

serranos or 1 large jalapeno, chopped
Directions

If using precooked meat, heat and grease the pan. If using raw meat, begin by cooking the meat halfway. Add the chopped vegetables, and simmer for about one minute. Add the egg and precooked meat. When the egg is mostly cooked, add the cheese, salt, and pepper, and break up the egg with a spatula. Turn off the heat and let stand until the cheese is melted. Serve on warm tortillas.
