A quick and easy way to turn healthy chicken breast into a tasty grilled treat with an Indian flavor.

Ingredients

1/2
cup lowfat plain yogurt (I like the Stonyfield yogurt)

tbsp sesame oil

tbsp curry powder
ground cayenne pepper

lb. chicken breast, cut into 1" cubes

Directions

1/2 cup lowfat plain yogurt (I like the Stonyfield yogurt)

1 tbsp sesame oil

1 tbsp curry powder

ground cayenne pepper

1 lb. chicken breast, cut into 1" cubes

Mix the yogurt, oil, and curry powder together. Add additional curry powder to taste, or add cayenne pepper for extra zing. Mix with the chicken and marinate in the refrigerator for one hour. Put onto skewers and grill for 10 minutes, turning once. If you prefer, you can put the skewers onto a roasting rack in a pan and put into an oven at 350 degrees for 20 minutes, turning once.

To turn this from a main dish into a full meal, add onion petals, cherry tomatoes, and sliced bell peppers onto the skewers, and serve with jasmine or basmati rice.

The sauce is also great on shrimp, lamb, and vegetables.
