Ingredients

15 ounce can of black beans
1/4
cup finely chopped onion
1/4
thick and chunky salsa

tsp of fresh parsley or cilantro
1/2
cup plain bread crumbs

Whole wheat hamburger buns
Optional toppings: low fat sour cream, salsa, lettuce.
Directions

1. Drain, rinse and mash black beans. Add onion, corn, salsa, garlic, cilantro, salt and pepper to beans and mix well.

2. Add bread crumbs and egg whites to bean mixture; mix well.

3. Form Mixture into four round patties.

4. Cook burgers over medium heat for 6 to 8 minutes in a skillet lightly sprayed with nonstick cooking spray. Cook each side until lightly browned; turing once.

5. Serve burgers on whole wheat buns and top with your choice of condiments.
