Description:

This is a simple and delicious recipe I came up with in college using one large pot and a portable electronic burner. The original recipe was not so healthy but my college age metabolism could handle it. I've come up with a healthier version in later years so I will post that as well. When I created this I was a vegetarian but now I make it with ground beef. The beef can be replaced with TVP and the baked beans can be replaced with vegetarian baked beans. The vegetarian version tastes more like real meat than any other vegetarian meal I've ever made.

lb ground beef

oz Bush's Baked Beans

jar spaghetti sauce (when it's not my own I prefer Classico's Sweet Red Pepper)

box rotini pasta
16
oz Velveeta Loaf (or more to taste)
Curry Powder
Cumin
Coriander
Salt
Pepper
Paprika
Onion Powder
Chili Powder
Chili Peppers

lb lean ground beef

oz Bush's Baked Beans

jar spaghetti sauce

box Smart Taste brand rotini
16
oz 2% reduced fat Velveeta Loaf
Curry Powder
Cumin
Coriander
Salt
Pepper
Paprika
Onion Powder
Chili Powder
Chili Peppers

Directions

1.
Cook the pasta and set aside. Rinse with cool water and keep slightly moist and covered.
2.
Brown the ground beef. Add the beans and spaghetti sauce.
3.
The spices are all to taste. I cover the mixture completely with the curry powder, chili powder, and onion powder then add approximately one teaspoon each of the other spices. Add as little or as many chili peppers as you like. This recipe has no heat without the peppers but you can make it to varying levels of spicy depending on how many you add.

Bring the mixture to a boil then cover and simmer for 50 minutes stirring occasionally. Add in the pasta and the cheese until it is melted and you are done. Serve alone or with tortilla chips.
5.
I've found that this dish lasts for a week with two people eating it constantly and lasts for about ten minutes if you bring it to a party.
