Ingredients

Flour Tortillas
Oil
1
onion
1
Chile
1
Garlic clove
Ground Cumin to taste (I like 1/4 tsp)
1
can black beans
1/2
cup water or vegetable broth
1
cup frozen corn
Scallions
Mexican Cheese to taste
Cilantro
Salsa

Directions

1.
Dice the onion, garlic and scallions.
2.
De-seed and chop the Chile.
3.
Drain the beans.
4.
Put oil in a skillet and heat.
5.
Add the onion, garlic, chile and cumin.
6.
Cook for 5 minutes.
7.
Add the beans and water and bring to a boil.
8.
Simmer until the liquid is almost gone.
9.
Add the corn and scallions.
10.
Set aside.
11.
On a flat griller heat the tortillas or put them on a plate covered with plastic wrap to steam in microwave for a minute.
12.
This depends on whether you like them crunchy or soft.
13.
If hard, put the tortillas on cutting board.
14.
Add the bean mix on top and cut into triangles.
15.
If soft, put the bean mixture inside add cheese and salsa and roll.
16.
It's easy to add more people to this recipe, just up the ingredients.
