Description: Very very simple and very tasty dish. and the result? great, you'll love it

Ingredients

    (for 4-6 servings ) :

    1 Kg.(2.20 pounds) Giant Calamari

    2 table spoons of sugar

    1/4 cup olive oil

    2 medium sized tomatoes (+/- 400 gr.)

    5-6 carrots (500 gr.)

    4 onions (500 gr.)

    1 medium sized apple

    3-4 cloves of garlic (optional)

    1/2 liter of good dry white wine

    1/2 liter water

    parsley,rosemary,3 leaves of sage, 2 bay leaves, all tied together.

    salt, pepper

Directions

    Giant calamari carrots stew:

    1) prepare ingredients(10 minutes) :

    1.a- cut the calamari into 2x2 cm's dice

    1.b-peel the carrots and cut into 3 inch long "sticks"(about 0.2 inch thick)

    1.c-peel the onions and cut into 0.5x0.5 inch dice.

    1.d- peel the apple ,remove the core and cut into 0.2 inch thick slices

    1.e- cut each tomato into 8 slices

    2) brown the calamari dice in a saute pan with the olive oil for 5 minutes, till the dices are slightly colored from all sides add the wine(= deglaze)and the sugar and stir well (the sugar is added to remove the acidity of the wine) for 4-5 minutes. then remove the calamari from the pan.

    3) brown the vegetables in the same pan and oil for 5 minutes, then add the calamari on top and cover with the 1/2 liter of water (no more). cover the pan and cook for 15 minutes.

    4) check to see if the carrot is "al dente" check for taste (salt & pepper).
