Ingredients

talong or eggplant
1
cup Coconut cream
1
minced onion
2
tbsp vegetable oil

tsp salt

Freshly ground black pepper

Directions

1.
Roast whole eggplants in oven.
2.
Peel and chop them into small cubes.
3.
Preheat a skillet with vegetable oil, add onion until lightly cooked.
4.
Add diced eggplant.
5.
Add salt and pepper to taste while stirring.
6.
Remove from heat.
7.
Pour in coconut cream and let stand for 10 minutes.
