Ginger Ale Syrup

Description:

My husband and my more complex rendition of ginger ale syrup- great in carbonated water as a soda, or to flavor your tea.

Ingredients

3/4
to 1 cup of ginger, roughly chopped
1/2
cup honey, local is preferred
1/2
cup raw sugar
2
cups water
Juice of lemon/lime or half of each
Carbonated (seltzer) water

Directions

1.
1. Chop the ginger, and add all ingredients to a medium saucepan.
2.
2. Bring to a boil, stirring occasionally, to dissolve the sugars.
3.
3. Once boiling, reduce to a simmer, and let simmer for 10 minutes.
4.
4. Remove from heat and let the mixture cool.
5.
5. Once cooled, strain out the ginger pieces.
6.
6. Squeeze in lemon/lime juice (to taste)
7.
7. Store in a jar or other container in the refrigerator for up to 2 weeks.
8.
8. Use anywhere from 2 tsp to 2 tbsp of syrup to about 8 oz of carbonated water, depending on how strong you like it. Stir to combine well, and enjoy.

* any sugar can be used in the same ratio to water, but we have found that the use of honey and raw sugar makes the flavors a bit more complex and interesting.
10.
** We also enjoy adding this to our sweet tea in the same quantities to make ginger-tea.
