Ingredients

Egg (or egg substitute if thats your thing)

cups Gluten-Free Baking Flour (I like Bobs Red Mill)
Optional to add 1/2 cup walnuts
Directions
1.
1. Grease loaf pan. Preheat oven to 375.

2. Mix dry ingredients in large bowl: flour, sugar, salt, baking powder, soda.

3. In small bowl, use just enough dry mixture to coat cranberries and walnuts.
4.
4. In medium bowl mix oil,water, oj, orange zest, and egg.
5.
4. Combine dry and wet mixtures.
6.
5. Fold in Cranberries and Nuts.
7.
6. Bake for oooooone hour.
