Gluten Free Cranberry Orange Bread

Description:

I love this bread with cream cheese- A friend made it for me before I realized I couldn't eat Glutens, but its still delicious with substituted flour.

Prep:

20 prep, 1 hour cook

Ingredients

1
Egg (or egg substitute if thats your thing)

cups Gluten-Free Baking Flour (I like Bobs Red Mill)
1
cup sugar
1/2
tsp salt
1
1/2 tsp baking powder
1/2
tsp baking soda
2
tbsp veggie oil
1/2
organic orange juice
1/2
tbsp orange zest
1
cup cranberries
Optional to add 1/2 cup walnuts

Directions

1.
1. Grease loaf pan. Preheat oven to 375.
2.
2. Mix dry ingredients in large bowl: flour, sugar, salt, baking powder, soda.
3.
3. In small bowl, use just enough dry mixture to coat cranberries and walnuts.
4.
4. In medium bowl mix oil,water, oj, orange zest, and egg.
5.
4. Combine dry and wet mixtures.
6.
5. Fold in Cranberries and Nuts.
7.
6. Bake for oooooone hour.
