Gluten Free Honey Mustard Glazed Chicken

Ingredients
1 tbsp olive oil
1/2 onion, chopped
6 boneless skinless chicken breasts
1 tsp paprika
salt
pepper
1 tbsp lemon juice
1/3 cup Dijon mustard
1/4 cup honey
1/2 tsp curry powder

Cooking Instructions
Step 1 1In a skillet heat olive oil over medium-high heat and add onion.
Step 2 2Saute until translucent.
Step 3 3Sprinkle chicken with paprika and salt and pepper to tast and add to skillet.
Step 4 4Cook chicken until nicely browned on both sides, about 5 minutes per side.
Step 5 5Set aside and keep warm.
Step 6 6Meanwhile, in a small bowl mix together lemon juice, mustard, honey, and curry.
Step 7 7Add to skillet mixing well while scraping off brown bits off bottom of pan.
Step 8 8Return chicken to skillet and simmer a minute in the sauce.
Step 9 9Serve, spooning sauce over top of chicken.
