Ingredients

slices of ciabatta bread (approx 20mm thick)
2
or 3 tomatoes very thinly sliced
Plenty of a creamy goat's cheese (I use French)
Directions

Coat one side of each slice of ciabatta with pesto

Add a layer of the tomato slices
4.
Smear on plenty of the goat's cheese
5.
Sprinkle with black pepper
6.
Grill until goat's cheese is melted.
7.
Serve on it's own, or with a side salad.
