Description:

Orange jam is great, everybody knows it. But grapefruit jam is magic. the same recipe as for orange jam can be used for lemon jam, grapefruit jam and maybe tangerine jam too. Though simple, to succeed you must be precise with TIME and TEMPERATURE ( I'd use electronic timer and electronic thermometer that can go at leas to 120°c (250°F). The best cooking pot is made of copper, for it spreads the heat equally....

Ingredients

Kilogram (=35.27 ounce) GRAPEFRUIT

medium size lemons

Kilogram white sugar

Liter (1 cup) water

Directions

1) Cut the grapefruit into 5x5 mm. dice (0.2x0.2 inch)

2) put in a large pot or bowl, cover with water, cover with

plastic film and leave in the fridge for 10-15 hours

3) Cut the 2 lemons in dice (same size as above) and add to

the grapefruits.

4) add the water (1 cup) and let boil on a high flame. When

the mixture is well boiling, leave to cook precisely 10

minutes.

5) After 10 minutes add the sugar, stir well and let cook

till the mixture is 103°c (= 217°F). Then you start

stirring NON STOP till the jam is 105°c (=221°f) which

is READY.

6) Pour into jars (fill them to the rim while the jam is still

very hot) close tightly and put upside-down to cool
