Great Acorn Squash With Apple Stuffing

Ingredients

• 2 acorn squash (1 1/4 lb.)
• salt
• cinnamon
• 2 tbsp melted margarine
FOR STUFFING:
• 1/4
cup raisins
• 3 medium apples
• 4 tbsp margarine
• 1/4
cup brown sugar
• 1/4
cup sweet wine
• 1 tbsp lemon juice

Directions

1.
1. Halve the squashes and take out the seeds and other stringy interiors.
2.
2. Trim the undersides so that the halves will sit flat.
3.
3. Brush all the cut surfaces with melted margarine then sprinkle with salt and cinnamon.
4.
4. Place the cut squashes in a baking pan with cut sides facing down.
5.
5. In a pan put 1/2 cup of water, or just enough to just cover the bottom of the pan.

6. Bake the squash for about 30 minutes in preheated 350~ oven.

7. While baking the squash, soak the raisins in wine for it to plump.
8.
8. Chop apples into 1/2 inch cubes maybe peeled or unpeeled.
9.
9. In a small frying pan melt the margarine and add the apples.
10.
10. Cook for about 3-5 minutes or until slightly wilted.
11.
11. Add and stir in sugar and lemon juice.
12.
12. When squash is already baked, turn the cut sides up.
13.
13. Drain the raisins and add to the apple mixture.
14.
14. Fill the squash cavities, cover and bake for about 20-30 minutes more or until tender.
