Great Grannys Pink Almond Pearls

Ingredients

1-can
almond paste
1-cup
sifted 10X confectioners sugar
2-tbls
water
1/2-cup
finely chopped seedless raisins
1/2-cup
finely chopped apricots
1/2-tsp
vanilla
1-tsp
rum flavoring

Directions

1.
Combine all 7 ingredients in a bowl mix with a fork to blend completely, mixture will be stiff.
2.
Roll 1 tsp at a time into a marble sized ball between palm of hands. Drop each ball into pink icing (recipe below) lift out with a fork and hold over bowl letting excess drip off. Place balls not touching ea other onto wax paper, let stand 2-3 hrs or until icing is dry. Store balls in single layer in a covered container makes about 8 doz.

Pinkg Icing: Beat 1 egg white in small bowl, beat in 1/2 tsp white vinegar then 1 3/4 cups 10X sugar w/an electric beater. Continue beating until icing is thick and fluffy. Tint icing a delicate pink w/few drops of red food coloring.
