Description:

This is one of Chef Greg Grossman's signature recipes. He's the 13-year old Whiz Kid Chef taking the country by storm.

Ingredients

sea scallops
1
container of micro-greens
2
cups sake
1
tsp soy lecithin
For Dressing:
1
tsp balsamic vinegar
1
tbsp soy sauce
1
tsp sugar
1/4
tsp honey
1/8
tsp Worcestershire sauce
1
tsp rice wine vinegar
1
tsp Dijon mustard
1
tsp crushed black sesame seeds
1
tbsp sesame oil
2
tbsp olive oil
1
tsp truffle oil
Pepper to taste.

Directions

1.
Make dressing by combining the first eight ingredients. Mix well, then wisk in the last four ingredients. Set aside.
2.
Season scallops with salt, pepper, and sear on high heat with a little butter and olive oil until gold (about 2 minutes per side). Make sake foam by combining sake and soy lecithin with an immersion blender until light and foaming.
3.
Toss dressing lightly with micro-greens, place in bottom of bowl, top with scallop, then foam.
