GRilled Flounder Fillets with healthy veggies

Ingredients

1-2
thinly sliced flounder filets
large piece of foil
heated grill
1
cup of frozen peppers and onions, thawed
1
TBSP extra virgin olive oil
1
TBS butter
Blackened Seasoning
2
new potatoes, boiled, sliced

Directions

1.
Rinse and pat dry flounder filets
2.
Sprinkle both sides with blackening seasoning
3.
Lay on foil
4.
lay all veggies around the fish
5.
Sprinkle all with EVOO
6.
Cut up butter in tiny bits and place thoughout
7.
Make little pocket with foil, leaving room for steam
8.
Place on hot grill and cook for about 7 minutes.
