Gruyere Cheese in Gingered Pumpkin Soup

Ingredients

1/2 - 2 Pound Fresh Pumpkin, seed and skin removed, diced
1/2
Pound Yukon Potatoes, peeled and diced

Cups Vegetable Stock or Water
1/4
Cup Orange Juice

tbsp of Fresh Ginger, minced
1/2
Sweet Yellow Onion, sliced thin
1/2
Cup Cream Sherry
4
Ounces Gruyere Cheese, grated, for garnish

Cup Heavy Cream
2
tbsp Butter, unsalted

Directions

1.
1.Over medium heat, heat the butter using a large heavy pot.
2.
2.Cook the onions and until soft and translucent or for about 10 minutes.
3.
3.Add the pumpkin, potatoes and ginger and cook for about 3 minutes.
4.
4.Add stock or water, sherry and orange juice. Let it simmer and cook until pumpkin is soft and easily pierced with a fork or for about am hour.
5.
5.Put mixture to a food processor or blender and puree until smooth.
6.
6.Transfer the mixture back to the pot and add the heavy cream while stirring.
7.
7.Season with salt and pepper.
