hard-boiled large eggs, peeled and chopped

tbsp minced fresh herbs such as parsley, chives, and/or

tsp fresh lemon juice, or to taste
a pinch freshly grated lemon zest

slices whole-grain bread
Directions
1.
In a bowl stir together all ingredients except bread with salt and pepper to taste until combined well.
2.
Make 4 sandwiches, pressing bread slices together gently.
