Description:

This salad is perfect for the day after Thanksgiving ham. It's cool and refreshing.

Ingredients

c leftover ham, chopped into bite sized pieces
1
large bunch of romaine lettuce
1
bag of fresh spinach leaves
1/2
c pineapple chunks or rings (either is fine)
1/2
c peach jam or peaches would be okay too
2
tsp dijon mustard
1
tsp balsamic vinegar
3
tbsp olive oil
Salt and Pepper to taste
1/2
c. blue cheese

Directions

This is easily done in a blender or food processor. Start off with your pineapple, peaches, dijon, and balsamic vinegar in your blender or processor. Start this blending on low, you want your fruit to break down. Then, slowly start incorporating the olive oil. Allow this to pulse a few more times, and that is complete.
2.
In a large bowl, chop your romaine into bite size pieces and layer with the spinach. Then place your ham and crumbled blue cheese over the top and drizzle your dressing over everything. Toss to combine and sprinkle with salt and pepper to taste.
