Directions

Cut the beef into 1 inch chunks

put the beef in a food processor and pulse for half a second 10 times

combine beef, salt and pepper in a bowl, mix well with hands

park the patties in the fridge for at least an hour, preferably over night.

bring the patties to room temperature and grill over a hot grill for 4 minutes on each side for well done, 3 minutes on each side for medium, you get the idea.

Do not press the burgers with your spatula for god's sake, that's silly
9.
If you want cheese, knock yourself out.
10.
While the burgers are cooking, slather some mayo on the bottom of a toasted buttered or un buttered bun.
11.
Place the burger on the mayo bun and let it sit for a minute.
12.
Put your topping on top with the top bun and enjoy.
