1/2 tsp active dry yeast

1/2 cups all-purpose flour
1/2
cup drained cottage cheese
1/2
cup confectioners' sugar
Directions

Dissolve the yeast and 2 tablespoons of sugar into the warm milk.

In a large mixing bowl, sift the flour. Make a well in the center and place the yeast mixture into it. On top of that add the egg yolks, nutmeg, salt, butter, and remaining sugar. Combine carefully by turning the flour into the center.

Place the dough on a lightly floured surface (table, counter, cutting board) and kneed until the dough becomes elastic. Cover and let rise overnight in the refrigerator.

Roll the dough onto a lightly floured surface until it is between 1/8 and 1/4 inch thick. Cut into two inch circles. Cover this and let it rise another 15 minutes.

Combine the cottage cheese, whole egg, sugar, and vanilla. Form the dough rounds into balls and fill 2 teaspoons of the cheese mix.

In a large pot of fryer, warm 2 1/2 inches of oil to 350 degrees. Drop the doughnuts in carefully, turning when browned. Remove when cooked on both sides and roll in confectioners' sugar.
