Hearty Ham Crab and Potato Corn Chowder

Description:

I *LOVE* corn, so I want to make a chunky and hearty corn chowder for a meal. I use smoked ham to get that smokey taste because I'm not a big bacon fan. I add crab meat since it doesn't have an overpowering seafood taste to make the traditional ham & corn chowder more interesting. You can also use lactose-free milk instead of regular milk. This is a quick & easy recipe because I'm a professional woman and don't have a lot of time to cook. I use pre-made ingredients that you can get from regular stores to make tasty meals.

Ingredients

cans cream style corn
1
can sweet whole kernel corn, undrained
1
potato, cubed
1
cup onion, chopped
1
cup smoked ham, cubed
1
cup crab meat (imitation OK), flaked
1
cup water
2
cups milk
1
tbsp olive oil
Salt and pepper to taste
Parsley optional

Directions

1.
Cook ham and onion in pot with olive oil for 2 minutes to get the smokey flavor out in medium-high heat
2.
Add potato and cook with ham & onion mix for another 3 minutes
3.
Add water, cream style corn, whole kernel corn and cook for 15 minutes, stirring occasionally
4.
Reduce heat to medium-low
5.
Add milk, salt and pepper to taste and let it simmer for another 10 minutes, or until the potato is soft, stirring occasionally
6.
Garnish with parsley if desired
