Herbed Roast Pork Loin with Potatoes

Ingredients

• 1 boneless pork loin roast, about 3 to 4 pounds
• 1 tsp garlic powder
• 1 to 2 tsp freeze-dried or fresh chives
• 1/2
tsp garlic powder
• salt and pepper, to taste
• 1 tsp onion powder
• 1 1/2 tsp dried thyme
• 4 to 6 medium potatoes
• 2 tbsp olive oil
• 1 tsp thyme

Directions

1.
1. Rub pork loin with garlic powder, onion powder, thyme, sprinkle w/ salt and pepper
2.
2. Place pork loin in shallow roasting pan.
3.
3. For 55 min. roast at 325 degrees.
4.
4. Peel and cut potatoes in quarter and cook in boiling water for 10 minutes.
5.
5. After draining let it cool and put in a large bowl, toss with olive oil, dried thyme, chives, garlic powder, salt and pepper.
6.
6. Place potatoes around pork loin; roast an additional 45 to 60 minutes, or until pork registers at least 155° on a thermometer
7.
7. Cover roast pork loin with foil and let stand for about 15 minutes before slicing.
