Ingredients

Cheesecake:
One 9-inch graham cracker crust
1
Lb cream cheese (room temperature)

C sugar
3
whole eggs
1
tsp vanilla
Juice & Zest of 1/2 lemon
Topping:
8
oz Sour cream
1
tsp vanilla
1
1/2 tsp sugar

Directions

1.
Preheat oven to 300 degrees.
2.
Whip cream cheese with sugar until smooth.
3.
Add eggs, vanilla, lemon juice and zest - mix at low speed for 2 minutes (do not go on high, you will get bubbles and ruin the cake)
4.
Pour into graham cracker crust, bake at 300 for 40-60 minutes (until firm)
5.
Cool for 30 minutes before adding topping.

For topping:

Blend all ingredients.
8.
Pour over baked cake and bake at 300 degrees for 10 minutes.

Cool for 1 hour.

You can vary the flavor by omiting the lemon or adding other ingredients like chocolate chips.
