10 minutes to makde dough; 1 to 2 hours cutting; 5 to 7 minutes each baking

Ingredients

Butter, 200 grams (7 1/4 oz. approx)
Honey, 1 1/4 cup
Brown sugar, 3/4 cup
Flour, 4 cups
Baking soda, 1 coffeespoon
Ginger, cinammon and/or clove, 1/2 tsp each
Decoration (Optional)
Eggwhite, 1
Powder sugar, 250 grams (1/2 lb. approx.)
Food colorings
Sprinkles of your choice.

Directions

Melt together 200 grams butter, 1 1/4 cup honey and 3/4 cup brown sugar. Add 4 cups

flour, 1 coffeespoon baking soda and ginger/cinammon, sieved together. Mix to form a

dough and knead on the counter until it's smooth and of a nice tan colour. Leave in the

fridge until it's cooled completely.

Once cool, roll the dough to a 3mm thick (1/8 in. approx.) and cut using cookie cutters.

Bake on buttered tins at 190ºC (375ºF). The first tinful will be ready in 5 to 7 minutes,

the next ones will take a bit less. Be watchful, the coookies can burn easily.

Once the cookies are ready (and cooled completely) they can be decorated with an icing

made of 250 grams powder sugar and an eggwhite (additional sugar may be required). Colour

with food coloring and add the sprinkles of your choice- get creative! (great for

entertaining kids for hours!!!)

If the icing's too hard, it can be thinned by adding a few drops lemon juice.
