Ingredients

1
large, whole chicken
MARINADE 1. 1 tsp pepper
1
tsp salt
1
tbsp sugar
1
tsp sesame oil
MARINADE: 2. 3 tbsp honey
2
tbsp sweet soy sauce
1
tbsp lime juice
1
tbsp annatto seed oil
1
tsp sesame oil
MARINADE 3. 1 tsp pepper
1
tsp salt
1
tbsp sugar 1 tsp sesame oil

Directions

1.
Combine all the marinade 1. ingredients.
2.
Rub into the inside of the chicken and close with a needle or a bamboo stick.
3.
Marinate for 1 hour.
4.
Set chicken in a baking pan.
5.
Combine marinade 2. ingredients.
6.
Pour over chicken. Place in oven at 375 F.
7.
Mix the marinade 3. ingredients.
8.
Baste the chicken with this marinade every 10-15 minutes.
9.
Bake until skin is a golden brown and chicken is well cooked.
10.
Cut up the chicken and assemble on a serving platter.
11.
Serve with deep-fried sweet buns or steamed sticky rice.
12.
HELPFUL HINT: Basting is the secret to this recipe.
