Ingredients

cups high gluten white flour (bread flour)
1/2
cup cold water, plus additional if necessary

Package of store bought Udon Noodles
2
cans of Vegetable Soup Stock (Dashi)
aburaage (can find at most Asian Supermarkets though you can exclude it...This is what make it kitsune udon instead of plain udon soup)

1. Mix salt and flour.

2. Form flour into a bowl shape (ie with a big dent in the center).

3. Pour cold water into center and begin to mix.

4. Knead until well mixed.

5. Now here's the secret for us weak folk who aren't so good at kneading. Roll the dough into a ball and place it in a garbage bag.

6. Wrap another bag around that.

7. Place a towel on top of the bags.

8. Walk on the ball of dough covered by bags and towels. I know this sounds weird but it really works!

9. Do this until the dough is well kneaded. Feel free to check it, rewrap, and walk some more.

10. When it's well kneaded, take the dough out the bags.

11. With a light dusting of flour on the table, roll out dough until it is 1/6" thick.

12. Cut to make noodles about 1/4" in width.

13. Boil noodles for about 10 minutes and they'll be ready!

1. Boil Aburaage for about 10 minutes to get rid of oil. Then it will be ready for the soup.

1. Chop Green Onions.

2. Add Soup Stock, Soy Sauce, and sugar to a pan.

5. Add prepared Aburaage

Put individual servings of noodles in a bowl and pour broth mixture over it. Enjoy!
