Description:

Laksa is a popular spicy noodle soup from Peranakan culture, which is a merger of Chinese and Malay elements found in Malaysia and Singapore. Laksa paste can be found in supermarkets.

Prep:

If purchase readily laksa paste, takes only about 20mins to cook

Ingredients

100g laksa paste 1 tbsp cooking oil 200g fresh prawn 100g cooked fish cake 300g thick rice vermicelli (and/or yellow noodles) 50g bean sprouts 250g coconut milk (or condensed milk) 450g water Laksa leaf (chopped) Ingredients of laksa paste:- Galangai 南姜, lemongrass 香茅, candle nut 石栗, shrimp paste, dried shrimp, shallots 小红葱, turmeric 黄姜, garlic, dried chilli, vegetable oil, fish sauce, salt, sugar

Directions

1. Heating cooking oil in a pot 2. Add laksa paste and fry over low heat for about 1 to 2 minutes 3. Add water, bring to boil and simmer for 5 minutes 4. Add prawns and coconut milk and bring to boil. Simmer till cooked and turn off fire. 5. In a separate pot, cook thick rice vermicelli and bean sprouts in boiling water 6. Place cooked rice vermicelli and bean sprouts in a bowl. Garnish with prawns, cooked fish cake. Ladle hot laksa gravy into bowl, sprinkle laksa leaf and serve
