cups peeled and shredded potatoes
Directions

Place the potatoes on cheesecloth and wring out as much moisture as possible
2.
Place in a large bowl and mix in onion, eggs, flour and salt.
3.
In a large pan heat up the oil and carefully drop in spoonfuls of the mixture, pressing down on them to create a patty. Turn over halfway through cooking and remove when brown on both sides.
4.
Feel free to add things such as cheese, fruits or vegies on top!
