Ingredients

ball pizza dough from neighborhood pizzeria
1
cooked Maine lobster tail (boiled in water)
1
cup sliced crimini mushrooms
12
sun-dried tomatoes, in oil, drained
8
ounces thinly sliced fresh mozzarella

tbsp. olive oil
1
tsp. garlic puree
1/8
cup cognac
1
tsp. parmesan, grated
1/2
cup arugula
1
tsp. butter
1/8
cup good Chardonnay
Juice of 1 lemon
1
tbsp. granulated garlic

Directions

1.
Preheat oven to 500 degrees
2.
In a hot pan, saute criminis with garlic puree and olive oil until carmelized
3.
Deglaze with cognac
4.
Add 1 tsp. butter, lobster, tomatoes, Chardonnay & salt & pepper
5.
Roll dough to 12 inch round, place on metal baking round
6.
Top with lobster/mushroom mixture
7.
Top with mozzarella and granulated garlic
8.
Bake for five minutes, or until dough is browned & cheese is melted
9.
Remove from oven & top with parmesan & arugula. Squeeze lemon & drizzle olive oil over all
