Ingredients
Finely Chopped Coriander 10g
Finely Chopped Garlic 20g
Finely Chopped Ginger 50g
White pepper powder 1 tsp

1) Cut chicken into small pieces (mince) simmer in water for 1 1/2 minutes

2) Heat oil in pan, then add chopped ginger, stir fry then add chopped coriander and garlic, stir fry.

3) Add Chicken pieces and all seasoning and stir fry until cooked.

4) Put aside to cool down

1) Finely cube the shallots and ginger.

2) Cut lime in round slices and make small fine pieces.

3) Put chicken on the betel leaf, place little pinch of ginger, shallots, small slice of lime, few sprigs of fresh peppercorn, then put on top of the chicken with 2 roasted peanuts and serve.

To Enjoy you should try to eat this in one mouthful; for the full effect. You can use prawns instead of chicken too.
