Ingredients

Lb beef tripe per person
1
stalk scallions chopped
2
Lb potatoes diced small
1
bag frozen peas & carrots
Directions

Put tripe in a large stock pot in water with chicken bouillon.
4.
Let it cook for 2 1/2 hours so that the tripe becomes tender.
5.
Add potatoes, peas, carrots and rice
6.
Let this cook for another 1/2 hour
7.
Once all ingredients are tender the soup is ready
8.
Chop cilantro and add as garnish (brings out the flavors of the soup)
