Ingredients

oz tub of full fat sour cream
1
lb bacon OR 1 lb hot sausage-fried and thoroughly drained
1
cup shredded cheddar cheese
Salsa (this will be to taste)
Directions

Add a bit of milk to eggs and beat. Scramble eggs lightly. Cook the bacon or sausage, pat dry. If using sausage, crumble loosely.
2.
Spray 9 x 13 casserole dish and layer half the eggs, spread sour cream. Layer with bacon or sausage. Top with sour cream spread evenly. Cover with cheddar cheese.
3.
Bake at 350 for 20 minutes. Serve with Salsa to taste.

Note: Fresh avocado slices are a wonderful topping as well!
