New Mexican creamed potatoes

Description:

Potatoes, baked in a jalapeno-spiked cheese sauce. The dish goes well with omelets and goes together in minutes.

Ingredients

medium sized Russet potatoes
1/4
cup each salad oil and butter or margerine
3/4
cup sour cream
1
Tbsp. all purpose flour
1/2
lb. jalapeno flavored jack cheese, shredded or diced
Salt and pepper
1/3
cup grated Parmesan cheese
3
Tbsp. chopped parsley

Directions

1.
1. Put oil and butter in a square or round pan. Set pan in oven at 400 degrees for three minutes or until butter melts.
2.
2. Peel potatoes. Rinse and cut into 1/2 inch cubes. Put cubes in pan. Stir to melt with butter mixture.
3.
3. Bake, uncover, at 400 degrees for 50 minutes, or until potatoes are soft enough to mash with a spoon.

4. In a small bowl, smoothly blend sour cream and flour. Add to potatoes with Jack cheese and salt and pepper to taste. Stir gently to mix.

5. Spread mixture in an even layer. Sprinkle Parmesan cheese evenly on top.
6.
6. Bake, uncover, for 15 minutes or until bubbling hot and lightly browned on top. Sprinkle with parsley.
7.
7. Serve hot.
