New Orleans Style Read Beans Rice with Sausage

Description:

This dish is hearty, filling, and inexpensive to prepare (about $5!). It is also a bit spicy! If you prefer a more mild experience, substitute regular smoked sausage (such as Hillshire Farms) for the andouille sausage. There is virtually no preparation time on this dish before turning the stove on; you should be able to make it in about 30 - 40 minutes. This recipes "scales" quite nicely; I multiplied everything by 4 and the only difficulty was stirring, and fed 12 people two meals! This recipe makes about 4 - 6 servings, depending on how hungry your guests are.

Ingredients

Large sweet onion (optional)

can (14 oz.) Dark kidney beans
1
cup parboiled/converted rice (Mahatma Gold, Zatarain's, Uncle Ben's, etc.)
Water
1
can (14 oz.) diced tomatoes
Dash Salt
Dash Ground red pepper
1/4
tsp. ground black pepper
1/4
tsp. paprika
1
lb. Cajun andouille sausages
2
shakes Frank's Red Hot sauce or 1 tsp. vinegar

Directions

Chop the onion if desired. Drain the can of kidney beans into a measuring cup, and then add enough water to make 2 cups total. Add the water/bean mixture, salt, red pepper, black pepper, paprika, and hot sauce (or vinegar) to a large saucepot, and turn onto medium heat. In a large pan, put the sausages and turn to medium, turning every 3 - 5 minutes (just blackening on a side). When water boils, add the rice, beans, and onion, cover, and turn to low heat to simmer. Stir every 5 minutes or so. When the sausage has been cooked on all sides, take out of pan and slice into 1/4" - 1/2" thick pieces, and add to the pot. When the rice is tender to the bite (fully cooked) or nearly so, add the tomatoes, including the liquid from the can. Cook an additional 5 minutes.
