New Years Appetizer Carmelized Onion Focaccia

Ingredients

package (11 ounce) refrigerated French bread dough
1/2
cup Swiss cheese, shredded
1
tbsp, plus 2 tsp olive oil, divided

large onions, sliced thin
1
tsp thyme
1/2
tsp salt
1/4
tsp pepper

Directions

Preheat oven to 350 degrees. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add onions, thyme, salt, and pepper. Cover with a lid and cook for for 15 minutes, stirring occasionally.

On a lightly floured surface, roll out dough into a 3 1/2 " x 21" rectangle. Place dough rectangle on a baking sheet lightly coated with cooking spray. Shape into ring, pinch ends together to seal. Brush dough with remaining oil. Spread onion mixture over top of dough. Sprinkle with cheese. Bake 25 to 30 minutes or until golden brown.

To serve, cut into small wedges and arrange on a serving platter while still warm.
